Palak Paneer

Lightly fried soft cottage cheese cubes, cooked with spinach in spiced onions. This tastes great served with garlic and coriander naan bread.

Frying The Paneer
 0.25 g Paneer 1 small block
 3 tbsp Oil
Masala Base
 2 Large onions
 3 tbsp Oil
 6 Green chillies
 1 tsp Ginger paste/grated
 1 tsp Garlic paste/grated
 Salt to taste
 260 g Sainsbury's baby spinach
Spices
  tsp Tumeric powder
 1 tsp Chilli powder
 1 ½ tsp Coriander powder
 1 ½ tsp Cumin powder

Frying The Paneer

This is the paneer I used, I bought this from my local Indian cash & carry and it should be available in most large supermarkets in the UK.

Cut paneer in small cubes, like the picture.

In a non stick pan, add about 3 tbs of oil, adjust if required.

Once the oil is hot, add in the paneer cubes.

Fry them on high heat. When one side looks done, turn them over.

Once they all are evenly fried take them out and keep aside.

In the same pan, add more oil (about 3 Tbs), adjust the oil if required.

Once the oil is hot, add the onions and salt to taste. I thinly sliced my onions.

As a guide add under 1/2 a tablespoon of salt and adjust towards the end if required. It's better to always add less salt in any cooking at the start then adjust it towards the end.

Put the gas up and mix it in.

After you have mixed it in, cook on medium heat and make sure to stir quite often.

Add the ginger and garlic once the onions starts to soften. I always use homemade paste.

Mix this in.

Add in finely chopped green chillies, chilies can be adjusted to your taste.

Mix this in and cook on low heat until the onions are soft. Make sure to stir often.

Add the spices:

Tumeric powder 1/3 Tsp
Chilli powder 1 Tsp (adjust to taste)
Coriander powder 1 & 1/2 Tsp
Cumin powder 1 & 1/2 Tsp

Mix this in and cook over low heat.

The spices will become very dry, add some hot boiled water and mix it in to prevent it from burning. Cook for 10-12 minutes over low heat, making sure to stir often.

Add the paneer cubes.

Put the gas up and mix this in.

Put the gas down to medium heat and cook this for 5-6 minutes. Stir at times.

Add in the spinach and put the gas up.

All the spinach might not fit in the pan at once, so add half of it and add the rest once the volume of the first batch goes down.

When I was preparing my ingredients, I washed them first then finely chopped them.

Keep the gas on high heat so all the excess water comes out the spinach. Once all the excess water starts to dry up, put the gas down a bit and let this cook.

Cook this for 10-15 minutes on medium heat by stirring often. Towards the end, taste and adjust the salt.

Once the dish looks dry, you can turn the heat off.

Enjoy with Naan Bread or Rice of your choice!
