Mouthwatering chicken tikka pieces, marinated with spices and Patak's tikka marinade then finally baked in the oven using skewers. These delicious pieces can be served inside a wrap or on its own with salad and your favourite dip.
All the ingredients I used.
I cleaned my 2 chicken breast pieces, cut them in medium sized cubes then washed them properly good few times and finally drained them in a colander.
Add all the ingredients in a bowl, apart from the chicken.
Mix this in properly.
Paste is ready.
Add this paste on top of the chicken.
Mix this in properly with the chicken.
Cover the bowl and leave this to marinate for 1-2 hours, you can also cover the bowl with cling film and leave this to marinate overnight in the fridge.
If you leave this to marinate overnight, take the chicken out and bring it to room temperature before baking/grilling the pieces so the chicken cooks evenly.
Place the chicken in the skewers.
Tip: you can line the tray with foil so the tray is easier to clean later.
Bake these in the oven for 30-35 minutes on gas mark 6, or 200c on fan assisted oven.
Make sure to turn the skewers over half way during the cooking time, so the chicken cooks evenly.
All done, I served mine inside a tortilla wrap with salad, you can serve it however you prefer.
The pieces can also be cooled fully then placed in the freezer in a container/ food bags for later use, you can make stir fried rice, tikka masala or any other dishes you prefer.
Double the ingredients if you like to make a bigger batch to freeze.
