Triple Berry Mocktail

Refreshing drink made with Strawberries, Raspberries and Blackberries. This is perfect to go with any meal.

 12 Strawberries
 12 Raspberries
 12 Blackberries
 5 cups of Cold Water
 1 Handful
 3 Limes
  cup White granulated sugar
 Sprite/7up/Lemonade/Tonic water
 Crushed ice/ice cubes

Rinse all the fruits with water. You can cut the strawberries in smaller pieces if they are too big.

This will serve 4-5 people but ingredients will vary depending on the size of the jug/glasses you're using. You can follow my method as a guide and increase all the main ingredients to make it for more people.

Cut 1-2 limes in small pieces and also cut a few circular slices from the limes for decoration when serving.

Only grate the zest if you would like to decorate the glass rims with lime sugar. The glass can be decorated with the sugar only too if you are low on limes.

Grate the zest of one lime and you can use the juice for the mocktail later.

Mix the zest with about 3-4 tablespoon of sugar and keep aside.

In a pot, add the berries.

Add five cups of water. If you're making a bigger batch then increase the amount of water, sugar and fruits.

Put the gas up and bring this to boil.

Once it starts boiling, put the gas down and add in the sugar. I added less then 1/2 a cup at the start and then added a bit more after tasting the flavour.

Put the gas up and mix this in. Once you' ve mixed this in, let this boil on medium-low heat until the fruits are very soft and the sugar melts. Let this cook slowly for 12-15 minutes or more if required. Give it a gentle stir at times.

When the berries softens, it should look like this.

Turn the heat off. You can wait for the syrup to cool down before you transfer this to a jug.

Pass it through a sieve to the jug. I chose to pass it through to a bowl for it to cool down quicker. Press it down with a spoon so all the syrup drains fully. I

Keep the macerated berries separate, so you can add it to the mocktail later as the fruit puree.

As I mentioned. I poured the syrup in a bowl. This is a longer process as I made each one in individual glass.

If you pour it in a jug after the mixture cools, you can make it straight away by following the method below:

Once the syrup is in the jug, tear in some mint leaves, add some juice from the lime slices then add the pieces, add the macerated berries and finally add in the drink of your choice and fill the rest of the jug up. I used Sprite but you can use any drinks I have listed on the ingredients.

Give this a good mix then before serving, add in the ice.

If you like to serve it in sugar-rimmed glasses then you can add the ice in separate glasses, whichever way you prefer.

Follow this method to coat the glasses rims in lime sugar.

Mix the lime zest and sugar on a flat plate/tray.

Place the glass facing down and move it around so the rim coats properly.

This is the way I did individual glasses, which is a longer process. It will be better to make the mocktail in a jug without the ice then add it to each glasses, whichever way is easiest for you.

I added ice cubes & mint leaves in each glass, after coating the rims.

I then added the syrup, lime juice and lime pieces in each one.

I added the fruit puree after.

I filled each glass with Sprite and served it straight away. You can follow my cooking method then make the drinks the way it's easier for you.

Serve straight away and enjoy!
