Kheer with condensed milk, whole milk and water. There are different ways of making kheer for this recipe, I have used condensed milk to get the required sweetness and thickness. This is a very simple recipe and perfect for beginners too. This recipe is passed on to me by my mother.
Here are the ingredients I used. If you do not have glutinous rice/broken basmati rice, then you can soak normal basmati rice for about 20 minutes. After 20 minutes wash the rice and as you wash the rice, rub the rice in between your palm to break it. Wash the rice until clear and keep aside.
Roast the pistachios in a dry pan until it is evenly roasted on both sides. Once done, take them out and you can finely chop them or crush them.
I used 1 & 1/2 cup of glutinous rice.
Wash the rice until the water is clear.
Place the rice in a big non stick pot, the quantity will increase a lot so use a good size pot.
Add 10 cups of milk.
Add 2 & 1/2 cups of cold tap water.
Add five cardamom pods.
Put the gas up and bring this to the boiling point. Keep an eye on it all the time.
Once it reaches the boiling point, give it a good stir and put the gas down in between medium to low heat, make it lower if needed.
Let this cook for about 15-20 minutes, stir at times so the rice does not stick too much to the bottom.
Cook for 15-20 minutes or until the rice looks cooked. The rice should look like the picture and the consistency should thicken a bit too.
Once the rice thickens a bit, add the condensed milk.
Slightly put the gas up and mix this in properly. Taste the sweetness, add about 2 tablespoons of sugar, more or less to your taste. I never added any.
Cook this in between medium to low heat, adjust heat if required. Cook for 5-10 minutes. Make sure to stir at times.
Should look like this, after 5-10 minutes turn the heat off.
Discard the cardamoms pods before serving.
Garnish with crushed nuts in individual bowls or a big dish before serving. Enjoy!
Some people prefer to chill this once cold, before serving, I prefer it hot.
