Carrot Halwa

Gajar Ka Halwa, also known as Carrot Halwa. This dessert is made with grated carrots fried in ghee then cooked slowly in milk & double cream until the consistency is dry. This is finally garnished with nuts before serving warm on its own or with vanilla ice cream. This is a perfect dessert for special occasions.

 4 cups of Grated Carrots
 2 tbsp Ghee/unsalted butter
 2 cups Milk
 ½ cup Double cream
 ¾ cup White granulated sugar
 2 tbsp Cashew nuts
 1 tbsp Raisins
 2 tbsp Almonds
 ¼ tsp Cardamom powder

I used four cups of grated carrots. With the nuts and raisins, use more or less as you prefer.

In pan, add the ghee. Once the ghee melts, add the nuts and raisins.

Fry this by stirring on high heat until it's nice and golden.

Once it become nice and light golden, remove some only from the pan to garnish the dish with later.

In the same pan, add the carrots in.

Mix and cook on high heat for two minutes. Then stir fry the carrots in between medium-low heat for about 5-6 minutes, making sure to continuously stir. Adjust heat if required while frying.

It should look like this.

Add 2 cups of milk.

Put the gas up and mix it in.

Bring this to boil. Once the milk comes to boil, put the gas down and cook this in between medium to low heat for about 20 minutes.

Cook until the milk evaporates completely. Make sure to stir very often to prevent it from burning and sticking to the sides of the pan too.

Once the milk evaporates like shown in the picture, add 3/4 cup of sugar. Sugar can be adjusted to your taste.

Mix and cook this on low heat for 5-10 minutes.

Make sure to stir often.

Add 1/4 teaspoon of cardamom powder. Adjust it to your taste if you like.

Mix this in.

Add 1/2 a cup of double cream.

Put the gas up and mix it in, then cook just over low heat by stirring often.

Check the sugar and adjust at this stage if you want.

Once the cream dries up, turn the gas off.

Serve hot, warm or cold, garnished with extra nuts on top. This can also be served with vanilla ice cream on the side. Enjoy!
