Runner Beans Baji

Bangladeshi style, simple vegetable Bhaji perfect for days you're too busy to cook time consuming dishes. This is served on its own with plain white rice or as a side with any meat dishes of your choice.

 2 Runner beans packet, each packet 225g each
 2 Onions medium
 4 tbsp Oil
 6 Green Chillies
 Salt to taste
 2 Bayleaves (optional)
 4 tbsp Fresh coriander
Spices
  tsp Tumeric powder
 1 ⅓ tsp Hot/Mild Curry powder

I used two packets of Sainsbury's Runner beans- you use any brand. If the weight is lighter, that's fine, you can slightly adjust the spices if you like.

With the tip of the knife, take the strings from both sides of the beans, chop finely then rinse the beans in a colander and drain the water fully.

In a pan add 4 tablespoons of oil, chillies, bayleaves and salt. You can chop the chillies in half or finely chop them.

As a guide I've added under 1/2 tablespoon of salt. It's best to use less salt now as it can be adjusted towards the end.

Put the gas on high heat and mix this in. Cook on high heat for 3-4 minutes by stirring often.

After 3-4 minutes, put the gas down and cook just under medium heat until the onions are soft.

Cook until the onions are soft and make sure to stir often. If the onions become too dry, add a little amount of hot boiled water and mix it in to prevent it from burning.

I always boil some water in the kettle so I can then use this anytime during the cooking stage.

Add the spices;

Tumeric powder 1/3 Teaspoon
Curry Powder 1 & 1/3 Teaspoon

I used Bolst's hot curry powder, you can use any brand of your choice.

Put the gas up and mix it in.

Once you have mixed this in, cook this for 10-12 minutes on low heat and make sure to stir it quite often.

If the spices become too dry, then add a little amount of hot boiled water and mix it in.

When the spices are cooked, add in the beans.

Cover the pan and put the gas down to medium heat. Let this cook and make sure to give it a good stir at times. During this stage adjust the heat if required.

Cook until the beans start to soften. Once the beans start to soften, you can cook it uncovered for the remaining time.

As a guide this process of cooking the beans is about 15-20 minutes- cook until the beans look done to you.

Once the beans look cooked, you can taste and adjust the salt if required.

Finally garnish with fresh coriander, put the gas up and mix it in.

Cook for a further 2-4 minutes over low heat and turn the gas off.

You can serve with this with flat bread of your choice, plain rice or any meat dishes as a side. Enjoy!
