Tortilla Dhall Samosas

Tortilla stuffed with spiced red lentils and carrot.

 2 Onions
 1 cup Red lentils
 2 Medium carrots
 5 Green chillies
 5 tbsp Fresh coriander
 5 tbsp Oil
 Salt to taste
Spices
 1 ½ tsp Hot/mild curry powder
 ¼ tsp Tumeric powder
 ¾ tsp Coriander powder
 ½ tsp Cumin powder
To Make Samosa
 2 packets of small Tortilla wraps/Samosa pads/Puff pastries
Flour Paste
 1 cup Plain flour
 1 cup Warm tap water
  tsp White sugar
For Base

Here are some of the ingredients I have used.

Wash 1 cup of red lentils and cook for only 5-10 minutes.

Peel, rinse and grate 2 carrots and keep aside.

Slice 1 small and 1 medium onion.

Chop chillies and fresh coriander finely.

In a pan, add about 5 tablespoon of oil, adjust the oil if required.

Once the oil is hot, add in the onions, salt and chillies.

Put the gas up and mix this in. Let this cook on low heat until the onions are soft.

Once the onions are soft , add in the spices:

Curry powder 1 & 1/2 Tsp
Tumeric powder 1/4 Tsp
Coriander 3/4 Tsp
Cumin 1/2 Tsp

Mix this in and cook on low heat for about 10-12 minutes.

While cooking the spices, add some hot boiled water if the mixture becomes too dry. Cook the spices for 10 minutes.

Add in the carrots , put the gas up and mix it in.

Once you've mixed it in, put the gas down just over low heat and cook covered for 5-6 minutes. Make sure to stir at times.

Add in the lentils.

Put the gas up and mix it in.

Cook this covered until the lentils start to soften and make sure to stir at times.

Once it starts to look softened, you can cook uncovered for the remaining time. If your lentils are not looking cooked and it's taking too long to cook, sprinkle some water to speed the cooking process.

In about 10-15 minutes time, it should be like this. At this point, you can taste the salt and adjust it if required.

Finally garnish with fresh coriander and mix it in.

Mix this in, cook for a further few minutes and turn the heat off.

Flour Paste

Add 1/3 cup of plain flour & 1/3 Tsp of sugar in a bowl.

Get 1 cup of warm tap water in a jug and gradually add the water to make a thick paste. Mix while you add to get the perfect paste. If by mistake you add too much water, you can always add more flour.

Mixture should start to look like this. If required, adjust the water and flour to make the perfect consistency.

Making Samosas

I used two packets of these tortillas, cut each one in half and so at the end I had made 20. As a guide you will make 20-22 depending on how much you put in each one.

Place the tortilla on the board and cut them in half, you can do all of them together, I used 1 packet and 2 more tortillas from another packet.

At the bottom, on the straight line, add the flour paste all along.

Fold it over like this and press the edges together to seal it.

Hold it in your hand and add the mixture, pushing the mixture in if you need to.

Should look like this. You can then freeze them in batches in food bags in the freezer. If you feel like you may struggle making this using tortilla then you can use any puff pastries or samosa pads if you prefer.

You can bake them in the oven or cook in the air fryer- I think these options are better than deep frying as they produce better results.
