Strawberry Mocktail

Delicious strawberry mocktail made with fresh strawberry syrup, fresh lime juice, fresh mint leaves and Sprite. Perfect for summer and family gatherings.

Making The Syrup
 15 Fresh Strawberries
 ½ cup White granulated sugar/Honey
 5 cups Cold tap water
To Make The Mocktail
 Sprite/Soda water
 2 Limes
 1 cup Mint leaves
 Ice cubes/Crushed ice cubes
For decoration
 1 Lime
 White sugar
To Serve
 1 Jug
 Glasses

Rinse all the strawberries and cut them in smaller pieces.

These ingredients can be adjusted.

Cut some lime pieces and some in round circles to decorate the glasses with.

In a pan add the strawberries and 5 cups of cold water.

Add the sugar, I used 1/2 a cup of sugar. You can start off with half a cup then add more after tasting the syrup.

For a healthier option you can instead use honey to your taste.

Place this on the cooker and put the gas on high heat. Bring this to boil.

Once it comes to boiling point, put the gas down a bit and let this cook for about 20-25 minutes on medium heat. Adjust the heat if required, the sugar should fully melt by the end and the syrup will thicken.

By the end of the cooking time, it should look like this.

Once the syrup is done, turn the gas off and let this fully cool down.

Once the syrup is cold, transfer the syrup in a jug through a sieve so all the macerated strawberries are separated.

I transferred my syrup into a different jug instead of my serving jug, as it was easier for me to pour it in there.

The syrup can be stored when it is fully cold in the fridge and you can make the drink on another day if you like, or you can use some of the syrup and keep some separate for another day.

Place the macerated strawberries in a different bowl and with the back of a tablespoon, mash it a bit more. Keep this aside, you can add this to your drink later for more flavour.

Transfer the syrup to the serving jug if you already haven't.

The colour here is lovely!

You don't have to use all of the syrup, if you would like to keep some separate then do it now before adding any other ingredients to it.

Squeeze some lime juice in the syrup and add the lime pieces in.

Now add in the Sprite/Soda, water or any other drink of your choice. Add the drink in slowly then taste and add more if required.

Top it up with ice cubes, or you can add the ice cubes in individual glasses before serving.
Stir this in with a spoon.

I made a big jug and as a guide this will serve 8 people.
The drink might serve more or less people depending on the jug/glasses you will be using to serve it in.

All done and you can serve immediately!

If you would like to coat the glass rims in sugar, then with a lime piece go around the rim of each glass so the rims are covered in lime juice.

Add some sugar on a flat plate. Place each glass upside-down and move it around so the rims gets covered in sugar.

Add ice cubes in each glass and pour the drinks in.
