Cheese Balls

Delicious lightly spiced mashed potato stuffed with cheese in the middle. These are then coated in golden bread crumbs, deep fried until nice and crispy then finally served hot with a nice dip.

 3 Medium potatoes
 Cheddar Cheese-small cubes
 Salt to taste
 ½ tsp Coarse/Powder black pepper
 ½ tsp Chilli Flakes
 ½ tsp Oregano/Mixed Dry herbs
 2 Medium Eggs
 Golden Breadcrumbs
 Oil to deep fry

Wash three medium potatoes and boil with skin on until done. Do not over cook it.

Once done, drain, rinse then peel the skin off. Place in a medium sized bowl.

Mash this fully using a potato masher.

Add 1/2 Teaspoon each of black pepper, chilli flakes, oregano and salt to taste.

Quantity for any of these can be adjusted to your choice.

Mix this in fully and then shape balls like the picture. I made 12- you can double the ingredients of everything if you would like to make a bigger batch.

I cut 12 pieces of small cheddar cheese cubes as I only made 12 balls.

Now flatten each ball and place the small piece of cheese in the middle.

Now seal the cheese fully like the picture. One by one do this for all the balls.

Place some golden breadcrumbs on a plate/bowl.

One by one follow these few steps below.

Roll the ball in the breadcrumbs fully.

Now cover it with egg yolk.

Start off using one egg then you can use another egg if required.

Finally in breadcrumbs again, repeat the above process for the balls one by one.

Add enough oil in a deep pan to deep fry. Put the gas up and make sure the oil is very hot before placing them in batches.

Fry these mainly on high heat- if you lower the heat the balls will get soggy and absorb all the oil.

Once the bottom looks nice and golden turn them over.

Once both sides ares done, take them out and place on top of a kitchen tissue in a bowl to drain the excess oil.

Repeat the process for any remaining balls.

All done! Serve hot with your favourite dip.
