Ayre with Uri

Traditional Bangladeshi Ayre fish cooked with Uri- simply delicious and served with plain white basmati rice.

 14 Ayre fish/any fish
 24 Uri-Bangladeshi beans
 3 Medium onions
 8 Medium Garlic Cloves
 Salt to taste
 5 tbsp Coriander
 5 tbsp Oil
Spices
  tsp Tumeric powder
 1 ½ tsp Chilli powder
 1 ⅓ tsp Coriander powder
 1 tsp Cumin powder
Frying the fish
 ¼ tsp Tumeric powder
  tsp Chilli powder
 5 tbsp Oil
 ¼ Salt

These are the beans I used, in Bangladesh they are known as uri. I used 24 of these.

To prepare these, take the strings off with the knife from both sides. Then cut them in about 3-4 pieces.

Rinse them and keep aside.

I used 14 pieces of Ayre fish, my fish pieces were big slices but I have cut them in medium size pieces.

You can use any fish of your choice, if your fish has scales on then take them off before cutting them in smaller sizes.

Preparing the fish:

Place the fish in a bowl and wash gently a few times with lukewarm water.

Now add about 1 Tsp salt and rub it into the fish, wash the fish again a good few times until clean and drain fully and place in a clean bowl.

Add:
Tumeric powder 1/4 Tsp
Chilli powder 1/3 Tsp
Salt 1/4 Tsp

Mix all this in.

Add 4-5 tablespoons of oil, adjust the quantity of the oil as you go.

Once the oil is very hot, add in the fish- you may have to do them in two different batches.

Fry on high heat for a good few minutes until the bottom starts to look firm, then you can slightly adjust the heat a bit and let the inside cook for about 2-3 minutes.

After 2-3 minutes, put the gas up for 1 minute and then turn the pieces over. Repeat the cooking process for the other sides. Once both side looks done, take them out and keep aside. Repeat the cooking process for any remaining pieces.

In a medium size pot, add about 5 tablespoons of oil. Please feel free to adjust the oil to your preferences.

Once the oil is hot, add in the onions, chopped garlic and salt to taste. I used grated onions but you can also use chopped onions.
When you use grated or blended onions, it speeds up the process of cooking the onions. Normally with blended or grated onions, you can add the spices after about 5 minutes.

Put the gas up and mix it in. Once you have mixed it in, let this cook for about 5 minutes on low heat. If you're using chopped onions then cook until the onions are soft. Cook the onions covered to speed the cooking process.

Make sure to stir at times and add a little amount of hot boiled water if it becomes too dry at this stage.

Once your onions are soft, you can mash it in to create a smooth paste. I mashed my grated onions a bit more so the base is bit smoother.

Once the onion is cooked, add in the spices:

Tumeric powder 1/3 Tsp
Chilli powder 1 & 1/2 Tsp
Coriander powder 1 & 1/3 Tsp
Cumin powder 1 tsp

I always use a normal teaspoon to measure my spices.

Put the gas up a bit and mix it in.

Put the gas down again and let this cook for about 15 minutes.

When the spices are getting cooked, add some hot boiled water if the spices become too dry. Make sure to keep an eye and stir at times.

Add the beans once the spices are cooked.

Put the gas up and mix it in.

Put the gas down to medium, cover and let this cook. Adjust heat if required and stir gently quite often, if the base looks too dry then add a little amount of hot boiled water and mix it in so the beans cook fully without burning.

Add the fish on top.

If you prefer not to fry the fish, then add in the fish a bit earlier as it will take a little longer to cook.

Put the gas up a bit and mix this in. Put the gas down just under medium heat and let this cook for about 15 minutes. Gently stir at times.

To cook this stage with raw fish, follow the instructions below:

After you add in the fish, cook on high heat for a good few minutes until all the excess water comes out. Once all the excess water comes out, lower the heat a bit and cook until the fish looks done to you.

Gently stir at times.

After the recommended cooking time, follow the next steps.

Add hot boiled water, the consistency shouldn't be too dry or too thick.

Once you have added the water, bring this to boil on high heat. Cook on high heat for about 5 minutes or a bit more until the water dries up a little.

You can also check the salt and add more if required.

Finally towards the end of this stage, you can add some fresh coriander. Mix this in and cook for a further 3-4 minutes and turn the heat off.

Serve this delicious fish curry with plain white Basmati rice.
